Hummus

Confession time – I have a major addiction to hummus!

I absolutely love the stuff. It’s perfect in sandwiches with salad, as a dip with raw veggies, an accompaniment to falafel or burgers, spread over crackers as a snack…I can’t stop eating it!

A recent favourite – chunky hummus sandwich with fresh salad, raw red pepper and raw mushrooms. Mmm!

Personally I’m a big fan of chunky hummus. It tastes the best when home made of course, but if it’s a busy week Waitrose do a yummy essential pot for less than a £1! I’m also a fan of flavoured hummus – I think red pepper or lemon and coriander are my favourites (but roasted tomato is also really good..and caramelised red onion..and pesto!).

I recently found a recipe online for sundried tomato hummus. I’m currently moving house so my kitchen is packed into a million boxes, but as soon as I’m settled in next week it’s going to be at the top of my to do list! It looks amazing! I’ll report back with the recipe and my experiences.

Thai noodle soup

This is my life saver after getting in from a long day at work and opening the fridge to realise I have next to no fresh veggies left..! My Indonesian friend taught me a variation of it years ago when we lived together and I’ve relied on it ever since.

A quick, light, clean and easy meal to make. I just boil a handful of Thai rice noodles in organic chicken stock for 10 minutes, then add a handful of frozen sweetcorn and peas. After a few minutes I add any leftover fresh veggies lurking at the back of the fridge…mushrooms, baby corn, pepper, broccoli, anything goes!

Although I’m not vegetarian, I don’t eat all that much meat so I tend to throw in some tofu or quorn at this stage, with some freshly chopped chilli and coriander. Job done – dinner is ready!

(If i have any in the cupboard, I sometimes add coconut milk to give the soup a thicker, creamier texture. Tastes good against the chilli!)

Does anyone else like to cook Thai style soups? Any variations or suggestions for changing it up?
